Leve ao fogo uma panela com azeite, o sal e 1 e ½ xícara (chá) de água até amornar levemente (o suficiente para trabalhar a massa com as mãos). Retire do fogo. Coloque os ovos no centro da farinha e, aos poucos, adicione a mistura do azeite. Transfira a massa para uma gamela, ou uma superfície enfarinhada e sove até ficar bem lisa e elástica. Embrulhe a massa em filme plástico e deixe descansar por 1 hora a 1 hora e meia. Recheio: limpe o frango, retire a pele e as aparas. Lave-o, seque com toalha de papel, e corte-o pelas juntas. Aqueça em uma panela 3 colheres (sopa) de azeite, junte o frango e frite, mexendo de vez em quando, por 25 minutos, ou até dourar. Junte metade da cebolinha, o sal e cozinhe, mexendo de vez em quando. Junte a água, aos poucos, e cozinhe por 45 minutos, ou até o frango ficar bem macio. A seguir, desosse o frango, deixando pedaços grandes. Ligue o forno à temperatura média. Em outra panela, aqueça 3 colheres (sopa) de azeite, acrescente a lingüiça e frite, mexendo de vez em quando, por 10 minutos, ou até dourar de maneira uniforme. Retire a lingüiça do forno e reserve. Na mesma panela, doure o lombo, tempere com sal e junte o restante da cebolinha. Aos poucos, adicione a água e deixe 45 minutos, ou até a carne ficar macia. Reserve. Leve ao fogo 2 colheres (sopa) de azeite, a cebola e o alho e refogue. Junte os tomates e refogue por mais 5 minutos. Adicione a salsinha, o açúcar, a pimenta-bode, o sal e 1 xícara (chá) de água e cozinhe, mexendo de vez em quando, por 10 minutos, ou até obter um molho encorpado. Retire do fogo e deixe esfriar. Com o azeite restante, unte 18 fôrmas pequenas de barro ou de alumínio, de 10 a 15 cm de diâmetro, próprias para empadões. Montagem: abra a massa em uma superfície enfarinhada e use ¾ dela para forrar os fundos e laterais das fôrmas, deixando sobrar nas laterais das fôrmas. Forre o fundo das fôrmas com fatias de pão, distribua o frango, a lingüiça, a carne de porco, a guariroba, o queijo, os ovos e regue com o molho de tomate. Com a massa restante, cubra as fôrmas e com as massas laterais, enrole e dê acabamento ao empadão. Abra uma cavidade no centro e coloque o fermento, o açúcar e 2 colheres (sopa) de leite morno. Misture somente os ingredientes do centro até formar um mingau, cubra e deixe crescer por 15 minutos. Em seguida, aos poucos, misture a farinha das laterais e junte o leite restante, 1 ovo e a manteiga derretida (reserve 1 colher de sopa). Misture e sove bem até a massa ficar homogênea. Transfira para uma tigela polvilhada com um pouco da farinha de trigo reservada, cubra e deixe crescer por mais 1 hora. 
&lt;p&gt;Enquanto isso, coloque o tablete de manteiga gelada em uma superfície plana, polvilhe mais um pouco da farinha de trigo reservada e abra (com o auxílio de um rolo) um quadrado de 15 cm. Volte à geladeira por mais 50 minutos. Coloque a massa já crescida em uma superfície enfarinhada, sove por 2 minutos e abra no formato de um retângulo (20 x 35 cm). 
&lt;p&gt;Sobre metade do retângulo, arrume o quadrado de manteiga (deixe 1 cm de borda), dobre a massa, escondendo a manteiga e cubra com um filme plástico. Leve novamente à geladeira por 15 minutos. Em seguida, abra a massa novamente formando um retângulo (30 x 40 cm) e dobre-a em duas partes (como um envelope) a partir do lado mais estreito. 
&lt;p&gt;Volte para a geladeira por mais 15 minutos e repita o processo mais uma vez. Após esse tempo, abra a massa na forma de um quadrado com 40 cm e divida-a em 14 triângulos, dando o melhor aproveitamento possível, pois a massa não poderá ser aberta novamente. Enrole a massa a partir do lado mais largo do triângulo e, para finalizar, forme uma leve curvatura. 
&lt;p&gt;Arrume os croissants em uma assadeira untada com a manteiga reservada e forrada com papel-manteiga. Bata o ovo restante e pincele os croissants. Deixe crescer por 1 hora. Leve para assar em forno médio (200°C), por 35 minutos, ou até dourar. Amassar até obter uma massa lisa e mole. Deixar descansar 1/2 hora. Sobre um pano polvilhado com farinha de trigo. Com o auxílio de um rolo, abrir a massa o mais fino possível. Pincelar com a manteiga. Espalhar o recheio e sobre ele salpicar pedacinhos de manteiga. Suspender o pano para que enrole como rocambole. Colocar numa assadeira untada, dando-lhe o formato de meia-lua. Pincelar com a gema e levar ao forno moderado, por /12 hora. Depois de pronto, salpicar açúcar. Servir com chantilly à parte. Para o recheio, descascar e tirar as sementes das maçãs. Cortar em fatias finas. Colocar numa tigela e juntar a farinha de rosca. Levar a manteiga ao fogo até dourar. Juntar à mistura de maçãs. Adicionar as passas, o açúcar e o caldo de limão. Misturar bem e rechear o strudel. &lt;/font&gt;&lt;/tbody&gt;&lt;/table&gt;

Misture bem, acrescente a baunilha e, aos poucos, vá juntando a farinha. Sove bem a massa, por 8 a 10 minutos, para que fique lisa e homogênea, macia e elástica, sem grudar nos dedos. 
&lt;p&gt;Deixe-a descansar por 15 minutos e, com as mãos, vá formando pãezinhos de 7 cm de comprimento ou, se preferir, pequenas bolas (para fazer pães redondos). Deixe-os descansar por 20 minutos. Passado esse tempo, pincele-os com a gema batida e leve para assar em forno preaquecido a 165°C por 35 minutos.
